Banana Sour Cream Waffles with Warm Maple- Honey Syrup

1 cup all-purpose flour
1 1/2 tablespoons granulated white sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup sour cream
1 medium ripe banana
1 large egg, separated
1/2 cup milk
4 tablespoons (1/2 stick) unsalted butter, melted
SYRUP:
1/2 cup maple syrup
1/2 cup honey
3 tablespoons unsalted butter

  • Spray a waffle iron with non stick vegetable cooking spray (even if the iron is non stick), then preheat to medium-high heat
  • In a medium mixing bowl, combine flour, sugar, baking powder, baking soda, and salt. 
  • In another bowl, whisk together sour cream, banana, egg, milk and butter.
  • Make a well in center of flour mixture and pour in banana mixture. 
  • Mix with a rubber spatula with just a few strokes to evenly moisten batter; do not overmix! 
  • For each waffle, pour about 3/4 cup of batter onto iron grid and bake until waffle is crisp and well-browned, about 4 to 5 minutes.
  • Remove from iron with a fork. Serve immediately, drizzled with Warm Maple-Honey Syrup.
  • To make syrup: Combine syrup, honey and butter in a small saucepan or microwave-proof bowl. 
  • Warm over low heat or microwave at 2-minute intervals to melt butter and gently warm and liquefy into a syrup. 
  • Serve warm, or store in refrigerator in a covered container for up to 1 month and reheat as needed.

Chocolate Waffles

3 tablespoons unsalted butter
3 tablespoons vegetable shortening
2 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
3 tablespoons sugar
3 large eggs
1 cup milk
1/2 cup chocolate syrup, plus more for topping
1/2 teaspoon vanilla extract
Cooking spray
Confectioners' sugar and/or berries, for topping (optional)



  • Melt the butter and shortening in a small saucepan, stirring to combine 
  • Remove from the heat and set aside. 
  • Whisk the flour, baking powder, salt and sugar in a large bowl.
  • Whisk the eggs, milk, chocolate syrup and vanilla in a separate bowl. 
  • Whisk the egg mixture into the flour mixture until combined. 
  • Whisk in the butter mixture until combined.
  • Preheat the oven to 250 degrees F. 
  • Preheat a waffle iron and spray with cooking spray. 
  • Ladle some of the batter into the waffle iron to within an inch of the edge and cook until crisp. 
  • Transfer the waffle to a baking sheet and keep warm in the oven. 
  • Repeat with the remaining batter.
  • Divide the waffles among plates. 
  •  Dust with confectioners' sugar and top with berries and/or chocolate syrup.

    Zucchini Waffles

     Unusual waffles from Gimme Some Oven

                
    1 large zucchini, ends trimmed
    1-1/2 cups white whole wheat flour (or all-purpose unbleached flour)
    1 Tbsp. baking powder
    1 tsp. kosher salt
    1 tsp. cinnamon
    1/3 cup sugar
    1-1/2 cups milk 
    2 large eggs
    1 tsp. pure vanilla extract

    • Preheat waffle maker to 400°F.
    • Grate the zucchini on the large holes of a box grater. 
    • Use a strainer or dishtowel to then squeeze some of the moisture out of the zucchini, then set aside.
    • In a large mixing bowl, combine flour, baking powder, salt, cinnamon and sugar. Stir together.
    • In another large bowl, whisk together the milk, eggs, and vanilla extract.
    • Add the dry ingredients and beat until smooth. 
    • Fold in the zucchini and mix well.
    • Spray the waffle maker with cooking spray  
    • Spread half of the batter evenly over the bottom of the waffle maker and close the top. 
    • Cook for 5 minutes, or until the waffles are as crisp as you like them.  Repeat with remaining batter.
    • Serve hot, topped with butter and maple syrup.

    Spiced Apple Waffles

    So delicious. The apples bake inside the waffle, just like apple pie. Thank you Recipe Girl



    3 large eggs
    3/4 cup buttermilk, warmed
    3/4 cup milk, warmed
    1/2 cup unsalted butter, melted
    1 medium Granny Smith apple, peeled, cored and grated
    1 1/2 cups whole wheat pastry flour (or all-purpose flour is fine too)
    1 1/2 teaspoons pumpkin pie spice
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1/2 cup granulated sugar
    1 cup toasted pecans (completely optional)
    powdered sugar to sift on top

    • Preheat waffle iron. 
    • In large bowl, whisk together eggs, buttermilk, milk and butter. Stir in apple.
    • In another bowl, whisk together flour, sugar, baking powder, spice, baking soda and salt. 
    • Add flour mixture to egg mixture; whisk until smooth (some small lumps are okay).
    • Sprinkle 2 Tablespoons pecans (if using) onto waffle iron. 
    • Pour about 2/3 cup batter onto surface. 
    • Cook waffles until golden brown, about 5 minutes. 
    • Keep warm in 200°F. oven while cooking the remaining waffles.
    • Serve with warmed maple syrup and a sprinkle of powdered sugar.

    Cinnamon Roll Waffles

    1 3/4 cups all-purpose flour
    2 Tablespoons granulated white sugar
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    1/4 teaspoon salt
    2 large eggs
    2 cups buttermilk
    1/4 cup canola oil
    1 teaspoon vanilla extract

    CINNAMON TOPPING:
    1/2 cup butter, melted
    3/4 cup brown sugar, packed
    1 Tablespoon ground cinnamon

    CREAM CHEESE TOPPING:
    4 Tablespoons butter
    2 oz cream cheese
    3/4 cup powdered sugar
    1/2 teaspoon vanilla extract

    Prepare waffles:
    • In a medium bowl, whisk together flour, sugar, baking powder, baking soda and salt. 
    • Make a well in the center of the mixture; set aside.
    • In a separate bowl, whisk together eggs, buttermilk, oil and vanilla. 
    • Pour into the bowl with the dry ingredients. 
    • Stir just until moistened; batter will be slightly lumpy.
    • Preheat a waffle iron and spray with nonstick spray. 
    • Pour batter into waffle iron grid and close the lid. 
    • Bake until waffles are completely done- follow your waffle iron's instructions. 
    • Repeat with remaining batter. 
    • Keep waffles warm until ready to serve (a 200 degree oven is perfect).

    Prepare cinnamon topping: 
    • In a medium bowl, mix butter, brown sugar and cinnamon. 
    • Scoop the filling into a small zip baggie and set aside.

    Prepare cream cheese topping: 
    • In a medium, microwave-safe bowl- heat butter and cream cheese for 30 to 60 seconds; just until melted.
    • Stir together until smooth; whisk in powdered sugar and vanilla extract.
    When ready to serve, place waffle on plate, drizzle cinnamon topping, then drizzle cream cheese topping. Use as much or as little as you'd like. Serve immediately.
