Coconut Butterscotch Banana Bread

Coconut and butterscotch chips turn banana bread into a decadent breakfast choice. Thank you Inside BruCrew Life

Coconut Butterscotch Banana Bread - coconut and butterscotch adds a fun twist to the classic banana bread 

1/2 cup butter, softened
1 cup sugar
1 teaspoon rum extract
2 eggs
1 cup mashed banana
1/2 cup sour cream
1 3/4 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 cup shredded coconut
1 1/2 cups butterscotch chips


  • Beat the butter and sugar until creamy. 
  • Add the extract, eggs, banana, and sour cream and beat again.
  • Sift together the flour, baking soda, and salt. 
  • Slowly add to the creamed mixture. 
  • Stir in the coconut and butterscotch chips by hand. 
  • Spoon into a 9x5 loaf pan that has been sprayed with non stick spray. 
  • Bake at 350 degrees for 60-65 minutes.
  • Remove from the oven and let cool in the pan for 15 minutes. 
  • Carefully flip the bread out onto a wire rack to cool more. 
  • Store in a tightly sealed container.

Notes ~ If the edges of your bread start to get too dark, cover it with foil until it finishes

Bubbly Cheese Garlic Bread



1/2 c. butter, softened
1 to 2 cloves garlic, crushed
1/2 to 1 c. creamy Italian salad dressing
1 loaf Italian bread, halved lengthwise
2 c. shredded Cheddar, mozzarella or Monterey Jack cheese
2 t. dried parsley


  • Blend butter, garlic and salad dressing together in a small bowl. 
  • Place bread on a baking sheet, cut-side up. 
  • Spread butter mixture over both halves. Top with shredded cheese and parsley. 
  • Bake, uncovered, at 375 degrees for 10 to 20 minutes, until cheese is melted and bubbly. 
  • Slice each half into 8 pieces; serve warm.

Five Ingredient Strawberry Bread

This bread has only five ingredients and so simple to make. it can also be made into muffins or mini loaves. Use any fruit you like, eg apple, blueberries, raspberries, cherry, peach ..even pineapple. Thank you Ceo of Me


2 Cups of Bisquick
1/2 cup of Sugar
6oz of Vanilla Yogurt (Greek or regular)
1 Egg
2 cups of chopped up strawberries (or any fruit of your choice)

  • Mix the Bisquick, Sugar, Yogurt & Egg together until blended well.
  • Fold the strawberries into the mixture
  • Pour into your pan and shake it so it is even
  • Bake for 30-40 minutes at 400 degrees.
  • Let cool completely before you remove from the pan.
  • Serve with Cool Whip
