Raspberry Buttercream Filled Cupcakes

Fun little cupcakes perfect for Valentines Day...but yummy all year round. Thank you Thrifty Jinxy


CUPCAKES:
1 box Devils Food Cake Mix

1/2 cup Vegetable Oil
3 Eggs
24 Reese’s Miniatures unwrapped
Candy Decorations

RASPBERRY ICING:
1/2 cup softened Butter
1 tbsp Milk
2 tbsp Raspberry Preserves
2 cup Powdered Sugar
Pink Food Coloring

WHITE ICING:
1 cup softened Butter
2 tbsp Milk
4 cup Powdered Sugar

  • Bake cupcakes in muffin tins lined with cupcake liners according to box directions.
  • Allow to cool.
  • Make Raspberry icing by creaming butter and raspberry preserves in a bowl.
  • Slowly add in the powdered sugar, and milk as needed, until everything is incorporated and frosting is right consistency.
  • Add food color and beat to reach desired shade.
  • Beat for 5 minutes to make sure it is fluffy.
  • Transfer to piping bag.
  • Use a plunger or knife to cut a hole in the top of the cupcake. 
  • Remove inner cake just leaving a cap.
  • Pipe in icing and place cap back in cupcake.
  • Make White icing by creaming butter and slowly add powder sugar and milk until you reach righ consistency.
  • Beat for 5 minutes to make sure it is fluffy.
  • Transfer to piping bag.
  • Ice cupcakes then decorate tops with Reese’s miniature.
  • Ice Reese’s cup with raspberry icing.
  • Decorate with candy decorations like heart sprinkles.

Red Velvet Fudge

Im starting to think ahead to Valentines Day which is in a couple of weeks.This two bite mouthwatering M&M's® Red Velvet Fudge is the perfect sweet treat to share with friends and family. Thank you Self Proclaimed Foodie


Fudge:
  • 2 cups white chocolate chips (11 ounce bag)
  • 1 cup milk chocolate chips
  • 14 ounce can sweetened condensed milk
  • 1 vanilla bean, scraped or 1 teaspoon pure vanilla extract
  • 1 teaspoon liquid red food gel
  • 9.9 ounce package M&M's® Red Velvet
Frosting:
  • 4 ounces cream cheese, room temperature
  • 2 tablespoons unsalted butter, room temperature
  • 1 cup powdered sugar
  • 1 vanilla bean, scraped or 1 teaspoon pure vanilla extract

  • Line 8x8 pan parchment paper or aluminum foil
  • In a bowl over a saucepan with boiling water melt the white chocolate chips, milk chocolate chips, and sweetened condensed milk, stirring occasionally. 
  • This may take 5-10 minutes. 
  • Add the red food gel and stir until fully combined.
  • Pour half of the fudge into prepared pan
  • Top with a third to a half of the M&M's® Red Velvet candies
  • Pour remaining fudge on top. 
  • Store in refrigerator while you make the cream cheese frosting.
  • Cream together the softened cream cheese and butter a mixer. 
  • Add confectioners sugar and vanilla bean and beat on high speed until light and fluffy
  • Scrape sides and bottom to ensure thorough mixing.
  • Spread the cream cheese frosting on top of your red velvet fudge. 
  • Top with remaining M&M's® Red Velvet candies. 
  • Refrigerate at least one hour until fudge is firm and frosting has firmed up 
  • Remove fudge from pan and set on cutting board. 
  • The best method to cut the fudge is to use a large, sharp, hot knife. 
  • Boil some water and put it in a tall glass that fits your knife. 
  • Submerge the knife to get it hot, wipe off with a paper towel and cut
  • Repeat.

Conversation Heart Bark

Incredibly easy...just in time for Valentines Day. Thank you Love Bakes Good Cakes


1 pkg. (16 oz.) vanilla CandiQuik  
Conversation Hearts or Love Hearts
Sprinkles

  • Line a baking sheet with waxed paper. 
  • Set aside. 
  • Melt vanilla Candiquik according to package directions. 
  • Pour into the prepared pan and spread thinly. 
  • Immediately top with desired amount of Conversation Hearts and sprinkles. 
  • Allow to stand until chocolate hardens. 
  • Turn upside down onto a towel and peel off the waxed paper. 
  • Break into pieces.

Chocolate Cherry Marshmallow Brownies

2 cups granulated sugar 
1 cup (2 sticks) butter, melted 
4 eggs 
1 cup all-purpose flour 
1 cup baking cocoa 
2 tsp. baking powder 
½ tsp. salt 
2 cups miniature marshmallows 
1 jar (10 oz.) maraschino cherries, drained well and chopped 
½ cup semi-sweet chocolate chips 
2 tbsp. heavy whipping cream

  • Preheat oven to 350°F. 
  • Spray a 9x13-in. baking pan with cooking spray and set aside.
  • In a large bowl, cream the sugar and butter. 
  • Add the eggs and beat until thoroughly combined. 
  • In a separate medium bowl, combine the flour, cocoa powder, baking powder and salt. 
  • Gradually add to the creamed mixture.
  • Pour and spread the mixture evenly into the prepared pan. 
  • Bake for 28 minutes. 
  • Remove from the oven and sprinkle with the marshmallows. 
  • Bake an additional 2 minutes or until the marshmallows are softened, but not browned.
  • Remove from the oven. 
  • Sprinkle with cherries and allow to cool on a wire rack. 
  • In a microwave-safe bowl, melt the chocolate and cream. 
  • Stir until smooth. Drizzle chocolate over brownies. 
  • Let stand until chocolate is set! 
  • Cut into squares.

Red Velvet M&M Bark

Rich creamy chocolate bark topped with Red Velvet M&M's. Thank you Couponing and Cooking



1 pound good melting chocolate ( bars, chips, melts)
1 pound good melting white chocolate
Red food coloring
1 cup of crushed Red Velvet M&M'sValentine's Day themed sprinkles
Valentine's Day themed sprinkles

  • Using whatever method you prefer, melt your chocolate 
  • Pour/spread it evenly on a baking sheet lined with a silpat or wax paper.
  • Let that layer sit while you melt your white chocolate. 
  • Once the white chocolate is melted stir in red food colouring until it reaches your desired shade.
  • Pour/spread the white chocolate over the regular chocolate layer.
  • Top with crushed Red Velvet M&M's and sprinkles.
  • Refrigerate until completely set. 
  • Break into bite sized pieces and enjoy.

Cranberry White Chocolate Fudge

2 Cups White Chocolate Chips
2 Cups Vanilla Frostin
½ Cup Cranberries
¼ Cup Sugar
1 Cup Water

  • In a small sauce pot bring water, cranberries and sugar to a boil
  • Allow cranberries to boil for 1-2 minutes until they “pop” and then remove from heat.
  • Pour the cranberry mixture into a blender or food processor and blend until smooth
  • In a microwave safe bowl melt your white chocolate chips in the microwave in 20-second bursts, stirring in between until completely melted
  • In a separate bowl microwave frosting for 15-20 seconds until smooth.
  • Combine the melted chocolate with the melted frosting and whisk together
  • You can either pour your fudge mixture into a lined 8×8 pan or use fun little silicone molds, either one will work just fine.
  • Once fudge is poured, drop small dots of the cranberry sauce onto the fudge. 
  • Using a toothpick or knife, swirl the cranberry sauce into the fudge.
  • Refrigerate for 2 hours or until firm.

Gooey Red Velvet Brownie Cake

6 oz Chocolate (dark or white)
3 tbsp Heavy whipping cream
1 Box Red velvet cake mix
(plus ingredients on the box- egg, oil, water)
1 Box Fudge brownie mix
(plus ingredients on the box- egg, oil, water)
1 jar (14 oz) Sweetened condensed milk
1 pk (8oz) Cream cheese

  • Preheat oven to 350° F.
  • In a microwave-proof bowl, combine chocolate chips and heavy whipping cream. 
  • Microwave for 45 seconds - 1 minute. 
  • Remove from microwave and immediately start whisking until chocolate mixture is smooth. 
  • Allow to cool for about 15 minutes. 
  • Refrigerate until slightly firm 30-45 minutes.
  • In a mixing bowl, combine red velvet cake mix with ingredients list on the box. 
  • Mix well until all ingredients are combined. 
  • Pour batter into a 9”x13” pan.
  • In a mixing bowl, combine brownie mix with ingredients listed on the box. 
  • Mix well until all ingredients are combined. 
  • Pour brownie batter over top of red velvet batter.
  • Bake in preheated oven for 25-30 minutes. 
  • Remove from oven and allow cake to cool for at least 15 minutes.
  • While the cake is still warm, take the end of a wooden spoon or another round object and poke holes all over the top of your cake.
  • Pour can of sweetened condensed milk over the top of cake 
  • Allow it to absorb in the cake until cake is cooled. 
  • Let set until completely cooled.
  • While cake is cooling, prepare the chocolate cream cheese topping.
  • Remove hardened chocolate from refrigerator and combine in a mixing bowl with cream cheese. 
  • Beat on medium speed for a few minutes until well combined.
  • Add whipped cream and mix until incorporated. 
  • Refrigerate cheesecake frosting until ready to serve. 
  • Spread over top of cake.
  • After adding the cheesecake frosting, the cake must be refrigerated.

Triple Chocolate Rice Krispie Treats

Triple Chocolate Rice Krispie Treats: Sweet Bella Roos #chocolate #valentines

6 cups Cocoa Krispies cereal
1 pkg (10oz) marshmallows
3 tbsp butter
1 cup chocolate chips
1 cup M&M candies

  • Melt the marshmallows and butter in a large nonstick pan over low heat. 
  • Mix the cereal, chocolate chips, and chocolate candies together in a large nonstick bowl (or a bowl coated with cooking spray). 
  • Pour the melted marshmallow mixture over the cereal mixture, and mix well. 
  • Pour immediately into a pan lined with parchment paper.  
  • Keep in mind the size of the pan determines the thickness of your rice krispie treat.
  • Top with drizzled red candy melt and sprinkles for a fun Valentine's Day treat!

Valentine Candy Bark

A lovely toffee and chocolate bark. Thank you Diana Rambles


Saltines (1+ sleeves depending on the size of your cookie sheet)
2 sticks (1 cup) butter
3/4 cup brown sugar
12 oz bag semi-sweet chocolate chips
Candy/Topping of choice

  • Preheat oven to 400 degrees. 
  • Spray a jelly roll pan (cookie sheet with little lip around the edge) with cooking spray or use a cookie sheet liner instead. 
  • Arrange crackers to cover the bottom of the sheet. 
  • Melt butter, add the brown sugar, and then boil for 3 minutes. 
  • Pour over the saltines and put in oven for 5 minutes
  • Remove and sprinkle choc chips on top. 
  • When chocolate chips look glossy (about 2 minutes) spread the melted chips evenly across the top. 
  • Sprinkle your favorite toppings on top. 
  • I used M&Ms, mini marshmallows, conversation hearts, Andes mint chips, and sprinkles. 
  • Put it in the fridge to harden and then brake it apart into uneven pieces.

Monster Cookies

No flour...but quick cook oats. Thank you Happy Hour Projects

Monster Cookies

3 eggs
1¼ c. brown sugar
1 c. granulated sugar
½ tsp. salt
1 tsp. vanilla
1½ c. peanut butter
½ c. shortening
2 tsp. baking soda
4½ c. quick-cook oats (not the same as instant oatmeal)
½ c. chocolate chips
½ c. M&M’s
½ c. raisins

  • Preheat your oven to 350F.
  • Cream your sugars, eggs, vanilla, peanut butter, shortening and salt together.
  • Sift baking soda and oats together, and then stir it into your dough. 
  • Add the chocolate chips, M&M’s, and raisins. 
  • If you are going to omit any of the stir-ins, you should increase the other quantities to ¾ c. each for a total of 1½ cups of stir-ins.
  • Line your pans with parchment paper  
  • Drop by tablespoons and bake for 8-10 minutes. 
  • This recipe yields 5 dozen cookies

Chocolate Valentine Kiss Cookies

1/3 c. cocoa powder
1/4 tsp. salt
8 T. (1 stick) unsalted butter, softened
2/3 c. sugar
1 egg yolk
2 T. milk
1 tsp. vanilla extract
3/4 to 1 c. assorted Valentine sprinkles
25 to 30 Hershey Kisses or Hugs candies, unwrapped

  • Combine flour, cocoa, and salt; set aside.
  • Beat butter and sugar until light and fluffy
  • Add egg yolk, milk, and vanilla; mix until incorporated. 
  • Add the flour mixture until just combined.
  • Wrap dough in plastic wrap and refrigerate until firm, 1 hour.
  • Roll chilled dough into 1-inch balls and roll each ball in sprinkles, completely covering the dough ball with sprinkles. 
  • Place balls about 2 inches apart on a baking sheet. 
  • With your thumb, gently press down into the center of each ball to make a very small indentation. 
  • Chill the baking sheet of dough balls in the refrigerator for 10 to 15 minutes.
  • Bake at 350 degrees until set, about 12 minutes.
  • After removing cookies from the oven, immediately place a Hershey Kiss or Hug in the center of each cookie. 
  • Let cookies cool on the baking sheet for about 3 minutes, remove to a cooling rack to cool
