Apple Cider Glazed Pork Chops

These Apple Cider Glazed Pork Chops are Amazing! Perfectly seasoned, juicy, delicious and ready in under 30 minutes. A great dinner any night of the week! Thank you Delightful Made


1½ lbs  Bone-in Pork Chops
Rub:
2 Tbsp. brown sugar
2 tsp. chili powder
1 tsp. garlic powder
1 tsp. salt
½ tsp. pepper
1 Tbsp. olive oil
Apple Cider Glaze:
1½ c. apple cider
¼ c. maple syrup
1 Tbsp. Dijon mustard
½ tsp. crushed red pepper flakes
½ tsp. salt

  • Light your gas or charcoal grill and heat to medium high heat.
  • In a small saucepan, prepare the glaze by combining the apple cider, maple syrup, Dijon mustard, crushed red pepper flakes, and salt. 
  • Bring to a simmer. 
  • While the cider comes to a simmer, prepare the pork rub. 
  • In a small bowl combine the brown sugar, chili powder, garlic powder, salt and pepper. 
  • Mix thoroughly with a fork. 
  • Add the oil to the spice mixture. It will be the consistency of a crumbly paste. 
  • Pat the pork chops dry with paper towels, and then cover the chops on all sides with the spice rub.
  • Put the spice covered pork chops on the heated grill, and thoroughly brush with the cider glaze. 
  • Grill for about 6 minutes. 
  • Flip the chops and thoroughly brush with the glaze on the other side. 
  • Grill for about 2 more minutes, flip and brush again. 
  • Repeat this process until the chops cook for 10-12 minutes total
  • If you're also grilling apples, brush the halved apples with glaze and grill for about 5-6 minutes.
  • No need to flip. 
  • Serve along with the chops.

Monterey Chicken

Full of flavour and its simple to make. Thank you Mommy on Demand

4 chicken breasts
1 cup Monterey Jack Cheese
8 slices of bacon, cooked and crumbled
2 green onion, chopped
8 Tbsp BBQ sauce, we used Sweet Baby Rays
Marinade
3 Tbsp honey
3 Tbsp Soy Sauce
3 Tbsp Worcestershire Sauce
1/2 tsp salt
1 cup water
  • Mix marinade together and place in Ziploc bag 
  • Add in chicken breasts and let marinade up to 8 hours 4 at the most. 
  • Fire up the grill and cook your chicken until juices run clear.
  • Move chicken to the top grate in your grill. 
  • Add 2 tbsp of BBQ sauce to each breast, add cheese, bacon and green onion. 
  • Close lid and wait for cheese to melt, serve immediately.

Easy Grill Packets

Easy to cook on the campfire or the grill. Thank you Real Mom Kitchen


5 (18 inch) pieces of heavy duty foil
canola oil
1 (20 oz) pkg. refrigerated homestyle sliced potatoes or red potato wedges
1 small onion, cut in thin wedges
5 all beef hot dogs
⅔ cup bbq sauce
⅓ cup cheese

  • Brush the portion of each foil sheet where you will be placing the ingredients.
  • Divide potatoes evenly between the squares of foil.
  • Top each with some of the onion and hot dog.
  • Drizzle each with some of the bbq sauce followed by a sprinkling of the shredded cheese.
  • Fold foil over mixture sealing tightly.
  • Grill covered, over medium heat, for 15 minutes until heat through. 
  • Carefully open foil and allow steam to escape. 
  • Serves 5.

Sweet & Spicy Pineapple Chicken Kabobs

Marinade:
1 [6 oz] can pineapple juice
1/4 cup chopped cilantro
1/4 cup minced red onion/shallots
1/3 cup teriyaki sauce
2 Tbsp olive oil
2 Tbsp brown sugar
3 garlic cloves, minced
1 tsp minced ginger
salt & black pepper to taste

  • Mix all of the marinade ingredients together.  
  • Pour into a large plastic storage bag.   
  • Add the chicken and place into the fridge to marinate for at least 3 hours, overnight is ideal.

Spicy Pineapple Glaze: 
1 [10 oz] jar red pepper jelly
1/2 cup pineapple juice

  • Warm the glaze slightly in the microwave just until the jelly has melted so it will be easier to brush onto the kabobs. 
  •  Using a pastry brush baste the kabobs with the glaze at the end of grilling.  

Kabobs:
4 boneless skinless chicken breasts cut into 1 inch chunks 
1 green pepper cut into 1 inch pieces
1 red onion cut into quarters
1 1/2 cups of fresh pineapple cut into 1/2-3/4 inch chunks
6 bamboo skewers that have been soaked in water

  • Remove the chicken from the marinade.  
  • Alternate the peppers, chicken, pineapple and onion chunks onto the skewers.  
  • Season everything lightly with salt and pepper.  
  • Oil the grill grates and heat the grill to medium-high heat.  
  • Cook the kabobs rotating as needed so they will cook evenly.  
  • About 4 minutes on all sides.  You want the kabobs to char, but, not burn.   
  • A few minutes before removing from the grill,  reduce the heat to medium and begin to baste the kabobs with the glaze until they are lightly charred  
  • It will take the kabobs around 16-18 minutes in total cooking time depending on the size of the chicken pieces.  
  • Serve hot over rice pilaf.

Thai Beef Skewers

1 pound sliced Sirloin Steak
1 tablespoon minced Garlic
1/4 cup Soy Sauce, light
1 tablespoon Brown Sugar
4 Limes, squeezed
1/2 tablespoon Chili Sauce (like Sriracha)
2 sliced Red Bell Peppers (I used red and green)
8 Skewers


  • Soak the skewers in water, and preheat the grill to high.
  • Mix all the ingredients together and let marinade for 15 minutes.
  • Skewer the beef and peppers (two skewers per person), and grill them to desired doneness.
  • Enjoy!

BBQ Chicken Bacon Bites

Nonstick cooking spray

2 boneless, skinless chicken breasts, cut into 1-inch cubes
8 oz. (half pound) bacon, cut into thirds
1/2 cup Spicy Sweet BBQ Sauce or your favourite
About 21 toothpicks
  • Preheat oven to 300 degrees. 
  • Line a large baking sheet with aluminium foil. 
  • Spray lightly with cooking spray.
  • Wrap each chicken piece with a small strip of bacon. 
  • Secure with a toothpick, place on the baking sheet, and brush with BBQ sauce.
  • Bake for 15 minutes. 
  • Remove pan from oven, brush bites with more BBQ sauce, and return to oven. 
  • Bake for 15 more minutes.
  • Serve warm.

Grilled Pineapple Pork Chops

1 (20 oz) can pineapple rings, juice reserved
1/2 cup brown sugar
1/2 cup soy sauce
1/2 teaspoon garlic powder
4-6 pork chops
  • Mix together the Pineapple juice (reserved from the can of pineapple rings), brown sugar, soy sauce, and garlic powder together in a gallon-sized resealable plastic bag until all the sugar is dissolved. 
  • Add the pork chops and zip closed. 
  • Store in the fridge for 8-12 hours (the longer, the better!).
  • When ready to cook, preheat grill to medium-high heat. 
  • Remove chops from bag and place on grill.
  • Brush pork chops with marinade while they are cooking to let the flavour really soak in.
  • Grill until pork chops are browned and no longer pink inside (about 6-8 minutes per side- depending on thickness of chops).
  • While chops are cooking, place pineapple rings on grill and cook until they are warmed through and have slight grill marks on them. 
  • Serve pork chops with grilled pineapple on top.
