Baked Parmesan Fish

 I love fish cooked anyway, but this looks delicious.
16 ounces fish fillets
1 egg
2 tablespoons milk
1/3 cup parmesan cheese, grated
2 tablespoons flour
1/2 teaspoon paprika
1/4 teaspoon salt
1/8 teaspoon pepper

  • Beat egg and milk in a shallow bowl and set aside. 
  • In a zipper bag combine breading ingredients.
  • One at a time dip fillets in egg, shake off excess and turn or shake in breading in bag.
  • Bake uncovered on an oiled baking sheet at 350 degrees for about 25 minutes or until fish flakes easily with a fork.
  • Can be served with lemon wedges if desired.

Nutella Swirled Pumpkin Bread

Delight in the flavors of pumpkin and chocolate all nicely marbled in one perfect breadThank you Gather for Bread

1½ cups all-purpose flour
1 cup granulated sugar
1 cup canned pumpkin
½ cup butter, melted and cooled
2 eggs
1 teaspoon ground cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
¼ teaspoon ground ginger
¼ teaspoon ground cloves
½ cup Nutella, or other chocolate hazelnut spread

  • Heat oven to 350°F. Grease bottom only of 3 (5¾ x 3 inch) mini loaf pans or one large pan (9 x 5 x 2¾ inch); set side.
  • Combine all ingredients except Nutella in a bowl. 
  • Beat at medium speed, scraping bowl often, until well mixed.
  • Heat Nutella in a small bowl, microwave for 10-15 seconds, being careful not to overheat
  • Spoon half of pumpkin batter into prepared pans. 
  • Spoon half of Nutella over pumpkin mixture. 
  • Swirl gently with a knife. 
  • Spoon remaining pumpkin batter over top. 
  • Repeat with Nutella, swirling gently. 
  • Bake 25-35 minutes for mini loaves or 50-60 minutes for 1 large loaf. 
  • A toothpick inserted in center comes out clean. 
  • Cool 10 minutes; remove from pan. 
  • Cool completely on a wire rack

Pumpkin French Toast

Warm buttery French Toast with a hint of Pumpkin Pie. Thank you Kristine in Between

  • ½ cup milk
  • ¼ cup pumpkin puree
  • 2 eggs
  • 1 TBS honey
  • 1 tsp vanilla
  • ½ tsp pumpkin pie spice
  • 6 slices sprouted wheat bread
  • Butter for griddle

  • In a medium size bowl, whisk together all ingredients until smooth.
  • Preheat griddle to 350 degrees and melt butter.
  • Dip bread in egg mixture and coat both sides.
  • Cook on griddle until golden brown on both sides.
  • Serve with butter, warm 100% maple syrup, fresh whipped cream, and/or chopped pecans.

3 avocados - peeled, pitted and mashed
1 lime, juiced
1 tsp. salt
½ cup diced onion
3 tbsp. chopped fresh cilantro
2 Roma tomatoes, seeded and chopped
2-3 cloves garlic, minced
½ tsp. ground cumin

  • Mash the avocados, lime juice and salt in a medium bowl. 
  • Mix in the onion, cilantro, tomatoes, and garlic. 
  • Stir in the cumin. 
  • Serve immediately.

Crock Pot Pumpkin Spice White Hot Chocolate

This Crock Pot Pumpkin Spice White Hot Chocolate is just three ingredients and is so easy to make! Perfect for a chilly fall evening! Thank you A Night Owl

½ cup International Delight Pumpkin Pie Spice Creamer
3 cups whole milk
1½ cups white chocolate chips
Whipped cream and cinnamon for garnish, optional

  • Heat whole milk and white chocolate chips in crock pot on low for 2-3 hours until chocolate is fully melted and combined with milk.
  • Add International Delight Pumpkin Pie Spice Creamer and allow to heat through.
  • Serve with whipped cream and a sprinkle of cinnamon.

1 cup International Delight Vanilla Iced Coffee
⅓ cup International Delight Pumpkin Pie Spice Creamer
2 scoops vanilla ice cream
1 cup ice
  • Blend International Delight Vanilla Iced Coffee, International Delight Pumpkin Pie Spice Creamer, vanilla ice cream and ice together until smooth.
  • Top with whipped cream and serve immediately.
