Italian Suasage and Peppers Sliders

 Hawaiian rolls are topped with cheese, Italian Sausage, sauteed peppers and onions, and more cheese make delicious pull apart sliders. Thank you Renees Kitchen Adventures


1 lb. bulk Italian sausage (sweet or hot)
1 cup chopped onion
1/2 cup chopped green bell pepper
1/2 cup chopped red or orange bell pepper (or a combination of the two)
1/2 cup marinara sauce
1 - 2 Tbsp Zesty Italian salad dressing
1 - 12 ct. package of Hawaiian rolls, whole package split in half so there is a top and a bottom. 
10 slices provolone cheese
1 Tbsp grated Parmesan Cheese
5 Tbsp butter (salted), melted
1 clove garlic, minced
2 tsp. dried parsley

  • Preheat oven to 350 degrees F.
  • In large skillet, over med high heat, brown Italian sausage, breaking it up as it cooks.
  • Remove to bowl with slotted spoon. Set aside.
  • In same skillet, add onion and pepper. 
  • Cook on med high heat until onion is translucent and peppers are soft. 
  • Take off heat. 
  • Add sausage back in, along with marinara sauce and zesty Italian dressing. 
  • Stir to combine. Set aside.
  • Place the bottom half of the rolls in a disposable aluminum 9 x 13 pan. (or any size that fits the entire bottom half of the rolls).
  • Place 5 slices of provolone cheese (overlapping) on top of bottom of rolls.
  • Spread sausage and peppers mixture evenly on top of provolone cheese.
  • Sprinkle with grated Parmesan cheese.
  • Place 5 slices of provolone cheese atop the sausage and peppers and Parmesan cheese mixture. 
  • Top with top half of rolls.
  • In small bowl, combine the melted butter, garlic, and dried parsley. 
  • Brush over the tops of the rolls. 
  • Cover pan tightly with foil.
  • Heat in oven for 15 to 20 minutes or until the sliders are heated through and the cheese is melted. 
  • Serve warm.

Sausage and Ranch Quiche

So quick and easy, plus its ready to eat in an hour. You can also make ahead and freeze for later. Great for breakfast, lunch or dinner. Thank you Plain Chicken


1 (9-inch) frozen deep dish pie crust (no need to thaw or prebake)
8- oz breakfast sausage
½ cup bottled Ranch dressing
½ cup shredded cheese
3 eggs
1 cup heavy cream or milk
dash black pepper

  • Preheat oven to 350ºF.
  • In a skillet, cook sausage until no longer pink. 
  • Drain fat. 
  • Combine cooked sausage and Ranch dressing. 
  • Drop crumbles of sausage mixture in bottom of pie crust. 
  • Top with shredded cheddar cheese.
  • Whisk together eggs, pepper and cream. 
  • Pour egg mixture over sausage and cheese mixture in pie crust.
  • Bake 1 hour. 
  • Allow quiche to rest for 5-10 minutes before serving.

Chicken and Sausage Pasta Bake

 Quick easy and great for using leftover chicken. Ideal for a crowd, and easy to half the amount. Thank you Key Ingredient


2 pounds cooked chicken breasts, cut into bite size pieces
6 cooked Italian sausage links, cut into bite size pieces
2 jars of spaghetti sauce 
1 pound of pasta, penne, macaroni, shells or what ever you like
1 large package of pizza cheese
1 onion, diced
2 large bell peppers, diced
Handful of spinach

  • Cut up chicken, onion, peppers and sausage.
  • Boil pasta and drain (don't over cook)
  • Mix pasta, sausage, onion, peppers, chicken, spinach and sauce.
  • Put in a large deep dish. 
  • If it won't all fit, make a little side dish to freeze for lunch later.
  • Top heavily with cheese.
  • Bake at 325 degrees for about 45 minutes or until golden and bubbly.

Smoked Sausage and Macaroni Chili Skillet

Another quick and easy skillet meal. Thank you Hillshire Farm


  • package Smoked Sausage
  • cups uncooked elbow macaroni
  • medium onion, chopped
  • small green bell pepper, chopped
  • garlic, minced
  • can (14.5 ounces) chili style diced tomatoes
  • cup frozen corn, thawed
  • 1 1/2 teaspoon chili powder
  • teaspoon salt
  • can (15 ounces) pinto or kidney beans, drained
  • cups (8 ounces) shredded cheddar cheese

  • Cut sausage into ¼” slices; set aside.  
  • Cook macaroni according to package directions; drain and keep warm.
  • While macaroni is cooking, heat a large non-stick skillet over medium-high heat for 3 minutes.  
  • Add sausage, onion, pepper and garlic
  • Cook 4-5 minutes, stirring occasionally or until sausage is browned.
  • Stir in tomatoes, corn, chili powder and salt; bring to a boil.  
  • Reduce heat to medium-low and cook 10 minutes. 
  • Gently stir in cooked macaroni and drained beans  
  • Heat through, about 3 minutes.  
  • Sprinkle cheese over top, cover and cook over low heat until cheese melts, about 4 minutes.

Skillet Sausage and Potatoes

This is about as easy and delicious as it gets! Full of healthy ingredients and is quick to fix. This is the perfect meal for the busy family. Thank you Small Town Woman



1 1/2 lbs red potatoes
2 tablespoons olive oil
Hillshire Farm Smoked Turkey Sausage..13oz link
1 medium onion diced
1 red pepper diced
1 green pepper diced
2 cloves garlic minced
Salt & pepper
Cajun seasoning

  • Boil potatoes in large pot of water for 15 minutes. 
  • Run under cold water or place in refrigerator to chill. 
  • Dice potatoes after chilled.
  • In large skillet over medium heat add olive oil. 
  • Add potatoes and cook until lightly browned on edges ;approximately 15 minutes. 
  • Add sausage, onion, red pepper and green pepper. 
  • Cook until the sausages are browned and vegetables are tender. 
  • Add garlic and cook for additional 90 seconds.
  • Season to taste with salt, pepper and Cajun seasoning.

Savory Italian Sausage & Vegetable Soup

Savory Italian Sausage & Vegetable Soup is a satisfying meal in itself! Thank you The Gooseberry Patch



1/2 lb. Italian ground pork sausage
1 onion, finely chopped
1 clove garlic, minced
3 14-oz. cans chicken broth
1/2 c. white wine or chicken broth
28-oz. can crushed tomatoes in tomato purée
2 zucchini, quartered lengthwise and sliced
2 carrots, peeled and diced
3 stalks celery, diced
1 green pepper, diced
1 t. dried basil
1/2 t. dried oregano
1/2 c. orzo pasta, uncooked
1/2 t. salt
1/2 t. pepper



  • Brown sausage in a Dutch oven over medium heat. 
  • Drain, leaving a small amount of drippings in pan. 
  • Add onion and garlic 
  • Cook just until tender. 
  • Add broth, wine or broth, vegetables and herbs 
  • Bring to a boil. 
  • Add uncooked pasta 
  • Reduce heat and simmer for 20 minutes, until vegetables and pasta are tender. 
  • Add salt and pepper to taste.

Fried Cabbage with Sausage

This is a quick and easy dish, thats also low carb



1/2 stick butter or margarine
1 small head of cabbage, chopped
1 small onion, chopped
1 pound smoked sausage, sliced into round pieces (I use turkey)
1 (15 ounce) can diced tomatoes or rotel tomatoes
1/2 teaspoon salt
1/2 teaspoon pepper


  • Melt butter in large skillet. 
  • Add cabbage and onion 
  • Cook on medium high for about 5 minutes, stirring to keep from sticking to pan. 
  • Add remaining ingredients
  • Cover and simmer for 20 – 25 minutes.

Bacon, Sausage & Cheddar Quiche

Bacon, sausage and cheese....what else need I say..Thank you Real Housemoms


1 uncooked pie crust for a 9 inch pie
8 slices of bacon
2 tbsp butter
1 large onion, sliced
½ c sausage crumbles, cooked
8 eggs
½ c heavy cream
1 c milk
1 tsp salt
1 tsp pepper
1 tsp mustard powder
2 c sharp cheddar cheese

  • Preheat oven to 400 degrees
  • Cook the bacon until just before crispy
  • While bacon is cooking melt butter in a large saucepan and add the onion
  • Allow to cook until a dark golden brown, stirring occasionally
  • Remove from heat and allow to cool
  • Whisk eggs, cream, and milk together until fluffy
  • Add in salt, pepper and mustard powder
  • Stir in the bacon, sausage, onion and cheese
  • Press the crust into a tart pan or a deep dish pie pan
  • Pour the egg mixture into the pie crust and place onto a baking dish
  • Loosely cover with foil and place in the oven
  • Bake for 40 min
  • Remove the foil and bake for another 10 to 15 min until crust is golden
  • Remove and allow to cool for 5 to 10 min

One Pot Spicy Sausage Skillet

Thank you Plain Chicken


1 Tbsp olive oil
1 lb smoked sausage, sliced into 1/4" slices
2 Tbsp dried minced onion flakes
1 tsp garlic powder
2 cups low-sodium chicken broth
1 (10 oz) can Rotel tomatoes
1/2 cup heavy cream
8 oz campanelle pasta (or penne)
1/4 tsp salt
1/2 tsp pepper
1 cup Monterey Jack cheese, shredded
1/3 cup thinly sliced scallions

  • Heat olive oil over medium hight heat in a 12-inch oven safe skillet until hot.  
  • Add sausage and cook until lightly browned.
  • Add onion flakes, garlic powder, broth, tomatoes, cream, pasta, salt and pepper and stir. 
  • Bring to a boil.  
  • Reduce heat to low and cover skillet. 
  • Simmer for 15-20 minutes, until pasta is tender.
  • Remove skillet from heat and stir in half of the cheese. 
  • Top with remaining cheese and sprinkle with scallions.  
  • Broil until cheese is melted and bubbly.

Easy Cajun Sausage Jambalaya

Easy and delicious jambalaya recipe perfect for a quick weeknight meal for the family

1 tbsp olive oil
1 1 lb. package smoked sausage, 1/4 diced and 3/4 sliced into rounds
3 medium carrots, peeled and diced
4 celery stalks, diced
5 cloves garlic, minced
2 large bay leaves
1 tsp kosher salt
1 tsp oregano
1/2 tsp parsley
1/2 tsp smoked paprika
1/2 tsp chili powder
1/2 tsp kofte spice mix
1 1/2 cups white, long-grain rice, rinsed and dried
3 cups chicken broth

  • Heat oil in large sauté pan over medium heat.
  • Add the sausage rounds (keep the diced sausage for later) 
  • Cook until browned and carmelized. 
  • Remove the sausage with a slotted spoon to leave the drippings behind.
  • Add the carrots, celery, and diced sausage 
  • Cook until slightly browned and softened, about 4 minutes.
  • Add the garlic, salt, and dried spices to the pan and cook for 1 minute.
  • Add the rice to the pan and cook for 3 minutes, stirring frequently.
  • Add the chicken broth and bring to a boil. 
  • Once boiling, cover and lower heat and simmer for 10-15 minutes until the rice is done.
  • Remove the lid and stir in the sausage and serve.

Roasted Potatoes, Chicken Sausage and Peppers

A lovely one pot recipe for the LGH. Thank you Skinny Taste
  

1.5 lb (about 3 large) potatoes, russet or new
1 medium onion, peeled and quartered, layers separated
2 red bell peppers, seeds removed and cut into 1 inch pieces
2 tsp extra virgin olive oil
kosher salt and fresh cracked pepper to taste
1 tsp chopped rosemary (fresh or dry)
1/2 tsp garlic powder
olive oil spray 
1 lb Italian chicken sausage (al fresco's) cut each link into 6-7 slices


  • Cut the potatoes into small 1" x 1/2 inch pieces. 
  • Preheat oven to 375°. 
  • Spray one large non-stick baking sheet, or two small ones with olive oil spray to prevent the potatoes from sticking.
  • In a large bowl, combine potatoes, onions, peppers, olive oil, salt, pepper, rosemary and garlic powder. 
  • Mix well to be sure everything is coated with oil and seasoned evenly. 
  • Pour onto the prepared baking sheet and place in the center of the oven 
  • Bake for 15 minutes.
  • Use a spoon to toss so nothing sticks or burns.
  • Add the sausage to the baking sheet with the potatoes and vegetables and bake 
  • Toss once or twice for 25-35 minutes, or until your potatoes are cooked through. 
  • Cooking time will vary depending on the thickness of your potatoes and sausage 
  • Keep an eye so they don't burn.

Sausage and Spinach Pasta Bake

I have made this dish for years, its a great way to get your children to eat spinach. It can be made ahead or frozen before cooking. Adapted from Good Food Magazine


400g good quality pork sausages
1 tbsp olive oil
1 onion, chopped
Jar of pasta sauce..of your choice
Tin of chopped tomatoes
2tbsp tomato purée

For the sauce
50g butter
50g plain flour
600ml milk
freshly grated nutmeg
140g mature cheddar, grated

500g rigatoni or penne
200g fresh spinach

  • Preheat the oven to 190C/Gas 5/fan /170C
  • Slit the sausages and remove them from their skins, then chop them into small pieces. 
  • Heat the oil in a pan, add the onion and fry for 5 minutes, until softened and lightly browned. 
  • Stir in the sausages and fry until lightly coloured. 
  • Add pasta sauce, tinned tomatoes, tomato purée, and season.
  • Simmer uncovered for about 15 minutes until thickened. 
  • Taste and season. 
  • Set aside.
  • Put the butter, flour and milk in a pan. 
  • Gently heat, whisking, until thickened and smooth. 
  • Add a sprinkle of freshly grated nutmeg, season, then simmer for 2 minutes.
  • Add half the grated cheese and mix well
  • Bring a large pan of salted water to the boil. 
  • Add the pasta, stir well, then cook, uncovered, for 10-12 minutes, until tender. 
  • Remove from the heat, stir in the spinach and, when just wilted, drain well.
  • Tip half the pasta into a shallow ovenproof dish, about 2.2 litre/4 pint, and level. 
  • Spoon over the sausage sauce, then cover with the remaining pasta. 
  • Pour the cheese sauce evenly over the top and sprinkle with the cheddar. 
  • Bake for 20-25 minutes until golden brown. 
  • Leave for 5 minutes before serving.

Tex-Mex Sausage Potato Casserole

"Tex-Mex Sausage Potato Casserole"

3 Tbsps vegetable oil
1 Tbsp butter
1 med yellow onion – diced
1 celery stalk -chopped
1 lb Polish sausage – cooked and sliced
(2) 14.5 oz can Tex-Mex diced tomatoes
1/2 tsp salt
1/2 tsp pepper
8 med potatoes – peeled, cooked and cut up
1/4 cup shredded mozzarella cheese

  • Preheat oven to 350 degrees. 
  • Cook Polish sausage and slice into 1 inch pieces; set aside. 
  • Peel and cut each potato into six, equal-sized chunks and boil until fork-tender; set aside.
  • In a large sauté pan over medium-high heat add oil and melt in butter. 
  • Add onion, celery and Polish sausage; sauté until onions are translucent. 
  • Stir in diced tomatoes, salt and pepper; reduce heat and simmer for 10 minutes.
  • Add potatoes and mix until thoroughly coated. 
  • Transfer mixture to a 11” x 15” casserole dish, sprinkle with mozzarella cheese 
  • Bake uncovered at 350 degrees for 40 minutes.

Sausage Hash Brown Casserole

Sausage Hash Brown Casserole is a delicious breakfast or brunch idea that combines delicious ingredients for a creamy, cheesy, protein filled meal. Thank you. Real Housemoms

Sausage Hash Brown Casserole 

 
2 12 oz. Reduced Fat pork sausage
2½ cups shredded cheddar cheese, divided
1 10¾ oz can cream of chicken soup
8 oz container light sour cream
8oz container french onion dip
1 cup chopped green onion
¼ cup chopped green pepper
¼ cup chopped red pepper
⅛ tsp pepper
30 oz package frozen shredded hash brown potatoes, thawed
  • Preheat oven to 350 degrees
  • In a large skillet, cook sausage over medium heat until no longer pink and drain on paper towels
  • In a large bowl, combine 1¾ cups shredded cheddar cheese and the next seven ingredients
  • Fold in the hash brown potatoes
  • Spray some PAM Spray on the bottom and sides of a 9×13 pan
  • Spread half of the hash brown mixture into the 9×13 pan
  • Top with sausage and remaining hash brown mixture
  • Sprinkle with ¾ cup shredded cheese
  • Cover with foil and cook for 45 minutes
  • Uncover and cook for an additional 10-20 minutes until heated through
