Chicken Salad with Tarragon, Apricots and Almonds

Quick, easy and tasty. Thank you What a Girl Eats


3 cups of diced, cooked chicken, 
1/2 cup mayonnaise
2/3 chopped, dried apricots
1/2 cup chopped almonds
1 to 2 tablespoons fresh tarragon, chopped
1 tsp. Coleman’s dried mustard
Salt and pepper to taste ..white pepper has a more subtle flavour


  • Mix everything together and chill. 
  • Adjust seasonings.
