1 pound lean ground beef
1 onion, diced
1 packet taco seasoning mix
1 16 oz bag frozen corn
1 bell pepper (red, yellow or green), diced
1 12 oz can black beans, drained and rinsed (optional)
3 cups shredded cheddar cheese, divided
1 160z bag of frozen tater tots
1 1/2 cup of salsa
3 tablespoons sliced black olives (optional)
Optional toppings

- Preheat oven to 400 degrees
- Cook ground beef & onion medium-high heat until no pink remains.
- Add taco seasoning mix, 1/4 cup water, frozen corn, bell pepper and rinsed black beans.
- Cook an additional 5 minutes or until liquid has evaporated.
- Stir in 1/2 of the cheese.
- Pour beef mixture into a greased 9x13 pan.
- Arrange tater tots on top.
- Bake for 30 minutes.
- While this mixture is baking, blend salsa until smooth.
- After 30 minutes, remove from the oven, top with salsa, cheese and olives if using.
- Bake until cheese is melted and bubbly.
- Serve with desired toppings
