Ponchmipe is a local dish from North Wales, where I was born. Quite simply, its mashed potato and mashed swede or turnip, mixed together with a little butter and salt and pepper to taste. And to make it a bit more elegant, throw in a few chopped chives. Real comfort food. Lovely .
My dad used to make this for us when we were kids. His mum was from Wales. I thought we was the only people that knew it called ponchmipe. It's a really tasty dish and it brings back happy memories

ReplyDeleteMy Mum used to make this dish her family came from north Wales but she used to put it in a dish then put bacon on the top and put it back in the oven until the bacon was crispy, real comfort food

ReplyDeleteI am also from North Wales, my mum would boil the potatoes and the turnip and then fry then together in bacon drippings. She would mash everything up together, but not smooth, it had to be a bit chunky! Yes true comfort food.

ReplyDeleteI'm from near Mold and used to love having ponchmipe, especially creating a little well in the top where my mum would pour bacon fat into it. 😀
